Spiced Shrimp Tacos w/ Cilantro Cream Slaw. I created this dish from scratch, the goal was multiple levels of flavor, a collection of complementary textures, and a desire to go back for more! Cut off tail & cut shrimp into thirds. Place into a mixing bowl and cover top of shrimp with a layer of ground cumin (around 2 Tbsp), smoked paprika, onion powder, 1Tsp of minced garlic, 1Tsp of salt & pepper, and a drizzle of olive oil. Mix everything together throughly and let marinate while you make the slaw. Shrimp should have a beautiful coat of seasoning & garlic. INSTRUCTIONS FOR SLAW: Add a cup of slaw mix to a mixing bowl. Add in a quarter cup of rough chopped cilantro, 1 slice of jalapeño diced (optional), 1 heaping Tbsp of sour cream, 1 Tbsp Dijon Mustard, 1 Tbsp Sriracha, 1/2 Tsp Horseradish (optional), 1/2 Tsp Worcestershire (got cut out of video), 1 Tbsp onion power, pinch of salt & pepper, juice from half a lime. Mix throughly. INSTRUCTIONS FOR SHRIMP: On low-medium heat add 2 Tbsp olive oil and a quarter cup of chopped yellow onion to a medium size sauté pan and let sit for 60 seconds. Once aromatic add in spiced shrimp and let cook for 2-3 minutes. Mix & flip shrimp to cook both sides for 2-3 minutes. Add a pinch of salt & pepper and finish until shrimp is fully cooked. Take off heat and add to a hot corn tortilla. INSTRUCTIONS FOR CORN TORTILLA): Place corn tortilla on a medium flame and flip and rotate until hot & charred. If you don't have a gas stovetop put a sauté pan on your stovetop and turn it on high, cook tortilla until hot and slightly firm. INSTRUCTIONS FOR PLATING: Add 4-5 pieces of spiced shrimp & cooked onion to a small hot corn tortilla, place a scoop of cilantro cream slaw along 1 side of the shrimp, crumble queso fresco on top, and finish with chopped cilantro. Add a slice of lime on the side & enjoy!
