Today we celebrate Cinco de Mayo by making some noise for Taco Tuesday with @OldelPasoAustralia. Taking it up a notch and going Vegan! Definitely a favourite in our house and the best part is we pop all the ingredients in the centre of the table and the rule is, you have to add two vegies and the rest you can decide. Now, we’ve packed the vegies into the base with this jackfruit filling. Yes, you heard it, this isn’t pulled pork, it’s jackfruit…packs a punch of flavour but just that little bit healthier. In Australia it grows in tropical Queensland and in the top of the Northern Territory and now it’s available canned in the supermarket, it’s a favourite for me to use with Phoenix because when cooked this way it tastes, and the texture feels like pulled pork.
