Jen's Lentil Taco Recipe
These lentil tacos are packed with flavor, vegan and inexpensive to make! They have become one of our favorite meatless meals. Jen's Lentil Tacos 3 1/2 cups water 2 cups lentils 1 small onion, finely chopped 1/2 jalapeno, finely chopped 3 cloves garlic, minced 1 Tablespoon olive oil Juice of 1/2 to 1 whole lime 1/4 cilantro 2 teaspoons each: cumin, coriander, chili powder, salt 1 teaspoon salt 12 corn taco shells Additional limes, lettuce, and fresh salsa for topping Add water and lentils to a pot and bring to a boil. Reduce heat to medium, add lid and simmer for 10 minutes. Meanwhile, heat a skillet over medium high heat. Add one tablespoon olive oil and saute onions, garlic and jalapeno peppers for about 3 minutes or until tender. Once the lentils have simmered for 10 minutes, smash them a little. Stir in onions, garlic, jalapeno peppers, cilantro, lime juice, spices and salt. Taste and adjust seasonings, if desired. Spoon lentil filling into taco shells and top with lettuce and fresh salsa.
